Honey Cake
Honey Cake, as the name says the identifying ingredient of the cake is "HONEY". The confectionery is made in different variation, the below recipe is a quick one with the ingredients available in your pantry.The confectionery gained popularity in 19th century it seems. As per the legends in Wikipedia, the cake was created in the 19th century in the Russian Empire by a young chef who sought to impress Empress Elizabeth Alexeievna, wife of Alexander I.Empress Elizabeth couldn’t stand honey, and any dish made with it drove her mad. One day, however, a young new confectioner in the Imperial kitchen didn’t know the Empress' dislike, and he baked a new cake with honey and thick sour cream. Surprisingly, and unaware of the honey content, Empress Elizabeth immediately fell in love with it.Below might not be the recipe that impressed Empress Elizabeth Alexeievna, but I am sure this would definitely impress your taste buds 🙂
Ingredients
Cake Batter
- 1 cup Curd
- ¼ cup Oil
- 1 cup Maida
- ½1 tsp Baking Soda
- 1 tsp Baking Powder
- 1 cup Powdered Sugar
- 1 tbsp Butter
- 2 tbsp Cornflour
Sugar Syrup
- 2 tbsp Sugar
- 1 cup Water
- ¼ cup Honey
Jam Syrup
- ¼ cup Mixed fruit/Strawberry Jam
- 1 tbsp Honey
Garnishing
- 1 cup Shredded coconut
Instructions
- In a large mixing bowl add 1 cup of curd, 1/4thcup oil and mix it well
- To the above mixed bowl add 1 cup maida, ½ tsp bakingsoda, 1tsp baking powder, 1 cup powdered sugar and give it a good mix with nolumps
- Grease the mould with butter and cornflour to ensure thecake is easily removed from the mould.
- Transfer it to the mould and tap it to settle the batter.
- Add 2 tbsp sugar, ¼ cup water and 1 cup honey to the pan stir it well in low flame.
- Keep the sugar syrup aside.
- After the 30 min, poke the cake with a tooth pick or fork and ensure that the cake is cooked well.
- Before removing the cake from the mould, let the cake cool for 10min, so that itts easy to remove the cake from the mould
- Spread the sugar syrup over the cake.
- Add 1/4th cup of strawberry jam or mixed fruit and 1 tbsp honey to the pan and stir it in a low flame until the syrup is formed.
- Spread the mix over the cake.
- Give a last touch with a shredded coconut over the cake.And the cake is ready to it.
